-
Toppings. We topped our pizza with Italian-blend and mozzarella cheese, pepperoni, and a hot honey drizzle. This combination was simple yet delicious.
The Smoker Setup
Here’s the main equipment I used for this recipe. The Equipment and Tools section contains more of my grilling favorites.
-
Pellet grill/smoker. The Recteq 700 created a delicious pizza in less than 30 minutes. This grill is an excellent option for those who love pellet grills with newfangled technology. I’m a massive fan of their app, which lets you take notes on each cook. This grill is one for the ages and is quickly becoming one of my favorite pits.
-
Charcoal. I stoked the pit with Royal Oak Charcoal Hardwood Pellets, giving the pizza just the hint of wood smoke. This brand is my favorite for competitions or casual grilling because it is high-quality. They use no fillers, giving you pure smoke every time.
The Process for Making Pepperoni Pizza on a Pellet Grill
You can find an at-length tutorial in the video. For now, here’s a brief introduction to how this recipe came together.
-
Fire up the grill. We stoked the Recteq 700 with Royal Oak Charcoal Hardwood Pellets and fired it up to 425℉.
-
Shape the pizza. To shape the pizza, we placed the dough on a clean workspace lightly sprinkled with flour. We then rotated our dough ball to cover the surface with flour. Next, we used our hands to shape the dough into a large circle, kneading the dough to remove air bubbles. If you want to see this in action, watch the video!
-
Par-bake the crust. We gently laid the pizza crust on the grill and let it cook for a few minutes until the bottom was firm enough to move easily. Then, we flipped the crust, added a drizzle of olive oil to the top, shut the lid, and let it cook until the dough puffed up.
-
Assemble the pizza. We removed the pizza from the Recteq 700 and laid it on our work surface. Then, we sprinkled it with BBQ Bob’s Bobby T’s Pizza Seasoning. We spread BBQ Bob’s Bobby T’s Pizza Sauce over the pizza, then sprinkled shredded Italian blend and mozzarella cheese. To finish the pizza, we added sliced pepperoni.
-
Cook the pizza. We laid our assembled pizza back on the pit and let it cook for 10-12 minutes. Your cooking time may vary depending on your grill, but you want your pizza to be golden and the pepperoni rendered. We pulled the pizza off the grill and topped it with a little more BBQ Bob’s Bobby T’s Pizza Seasoning, and hot honey. The only thing left was to let it cool before digging in!
The Results
The Pepperoni Pizza on the Pellet Grill had such a great texture. The crust was perfectly crisp, and all our toppings were infused with a kiss of wood-fired smoke. This pizza will make you forget takeout exists!
Storing Leftovers
Leftover pizza can be stored in the fridge for up to 5 days or frozen for up to 2 months. If freezing, par-bake the crust, remove it from the grill, add toppings, cover, and freeze. Cook for 10-12 minutes on a pellet grill set to 425℉.
