My Grilled Corn Recipe is a great way to use excess corn from the garden or take advantage of a stellar deal.
The best part about this recipe is that you can use it in many different ways. Sure, it tastes great straight off the cob, but the kernels are also tasty on tacos, nachos, or salads. You can even use this Grilled Corn With Citrus Lime Butter as the base of a corn salsa! The sky’s the limit.
The Ingredients
Here are the ingredients you need to make a delicious bath of Grilled Corn.
- Corn. For this grilled corn on the cob recipe, you’ll need corn with the husks still on. This gives the corn a protective covering, allowing it to char without burning.
- Salted butter. Corn and butter go together like peanut butter and jelly. I used salted butter because it gives the compound butter a little extra jazz and perfectly offsets my citrus rub.
- Heath Riles BBQ Simple Citrus Rub. If you love adding a hint of citrus to your food, you’ll adore my citrus rub. This blend goes great on seafood, veggies, and chicken, and it’s also a great addition to salad dressings and dips. It’s bound to brighten anyone’s day.
- Lime zest and juice. I wanted to keep this corn tasting fresh, and added lime zest and juice. This gave the corn a hint of citrus without diminishing its natural sweetness.
The Grill Setup

- Kettle Grill. I cooked this Grilled Corn With Citrus Lime Butter on the Weber Kettle Grill. This minimalistic grill is long-lasting, compact, and easy to tote around. You can add more accessories like the Vortex Chimney, which is a must for two-zone fires.
- Charcoal. I stoked the pit with Royal Oak Charcoal Super-Sized Briquettes and Royal Oak Tumbleweeds, one of my favorite combinations. This combo burns hot and fast, infusing anything from steak to corn with the ultimate kiss of smoke.
The Process for Making My Grilled Corn on the Cob Recipe
You’ll find a detailed demonstration of this recipe in the video and recipe card. For now, here’s a quick rundown of how I made this recipe for grilled corn.
- Fire up the pit. I stoked the Weber Kettle Grill with Royal Oak Charcoal Super-Sized Briquettes and Royal Oak Tumbleweeds and fired it up to 450℉, creating a two-zone fire.
- Grill the corn. I left the corn in the husks and set it directly over the hot zone of the Weber Kettle Grill. Then, I let the corn on the grill cook for 22 minutes on the grill, flipping them at the halfway mark.
- Make the compound butter. I made a citrus lime compound butter by adding the butter, Heath Riles BBQ Simple Citrus Rub, lime zest, and lime juice to a small cast iron pan. I let the compound butter warm on the Weber Kettle Grill while the corn finished cooking.
- Move the corn. After about 22 minutes, I moved the husked corn to the cool zone of the fire to finish cooking. My corn had a total cook time of 35-40 minutes.
- Shuck and baste. I took the corn off the heat and placed it in an aluminum pan. Then, I shucked the corn. Be sure to watch the video to learn how I shuck corn without burning my hands! I placed the shucked corn straight on the hot zone of the fire and basted it with citrus lime compound butter. I let the corn char to my liking, then took it off the heat. I added a little more citrus lime butter and Heath Riles BBQ Simple Citrus Rub. The only thing left was to dig in!
