The cherry on top is a sprinkle of my Garlic Butter Rub, which brings out the best in any ingredient. There’s nothing better than a handheld breakfast, and these simple breakfast tacos are ideal for those always on the go. 

 The best part about this recipe is that it comes together in under 30 minutes. Whip up a batch for a unique weekday breakfast, or enjoy them on the patio on a lazy Saturday. Either way, these Easy Breakfast Tacos are crowd-pleasers that will leave everyone wanting more.

I love mix-and-match breakfasts, and this recipe comes with a wide variety of options. Feel free to add bell peppers, sautéed onions, or fresh herbs to boost the veggie content. If your family prefers bacon to sausage, go that route, or bring on the heat with chorizo! You can also include your favorite type of cheese or seasonings. The Ingredients

Here are the ingredients you need to make a mouthwatering batch of Easy Breakfast Tacos.

  • Sausage. Ground sausage makes a filling Easy Breakfast Taco base. I used ground sausage to control the size of the patties and give the tortillas a delicious, crispy texture. 
  • Tortillas. I used flour tortillas for this recipe, but you could also use corn tortillas if that’s what you have. Either way, you want a thick, hearty wrap that can hold all of your delicious taco ingredients without breaking.
  • Eggs. Every good breakfast taco needs eggs; this time, I went with fried. If fried eggs aren’t your thing, substitute scrambled eggs or egg whites. 
  • Heath Riles BBQ Garlic Butter Rub. This rub is a delectable AP rub ideal for those who adore garlic. You can add a sprinkle to popcorn, chicken, steak, seafood, compound butter, and just about anything else. 
  • Shredded cheese. I used freshly shredded cheddar cheese, which melts perfectly on the Traeger Flatrock Flat Top Grill. Watch the video to learn my hack for gooey cheese every time! 

The Smoker Setup

Here’s the main equipment I used for this recipe. More of my grilling favorites can be found in the Equipment and Tools section. 

  • Flat Top Grill. These Easy Breakfast Tacos came to completion on the Traeger Flatrock Flat Top Grill. This setup is fantastic for breakfast foods, but you can also use it to cook quesadillas, sandwiches, french fries, and burgers. The Flatrock is a must-have for those who love outdoor cooking. With divided heat chambers, you can cook multiple things at once.

The Process for Making Easy Breakfast Tacos

Watch the video to see a detailed demonstration of this recipe. Here’s a quick rundown of how I made these hearty Easy Breakfast Tacos.

  • Brown the sausage. I divided ½ pound of ground sausage into thirds, then rolled each piece into a ball. I laid the sausage balls directly on the grill and set a tortilla over the top. I used the tortilla to flatten the sausage ball, then let it brown.
  • Fry the eggs. I cracked the eggs onto the griddle, sprinkled them with Heath Riles BBQ Garlic Butter Rub, let them cook until the bottoms were no longer translucent, then flipped them over and let them cook for a few more seconds. 
  • Assemble the breakfast tacos. Once the sausage was browned, I flipped the tortilla over and turned the Traeger Flatrock Flat Top grill to low. Lower temperatures ensure the tortillas won’t burn while the cheese is melting. To assemble the breakfast tacos, I topped each browned sausage patty with a fried egg and cheese. I sprayed water around the tacos to create a steam effect, then shut the lid for a few seconds to let the cheese melt. I removed the tacos from the pit and let them cool.
  • Clean the grill. I know that the secret to a long-lasting grill is proper maintenance. So, the last thing I do is clean my griddle. Here’s my method: I spray water on the grill to remove any stuck debris and wipe away any grease. Then, I lay down a good layer of oil to keep the grill seasoned for the next use.
