The Ingredients
Here are the ingredients you need to make a one-of-a-kind Buffalo Chicken Pizza.

Buffalo chicken. Most deli counters sell premade Buffalo chicken, but we created our own by marinating chicken in olive oil and Heath Riles BBQ Buffalo Seasoning. This was an easy process, and it tasted amazing!

Toppings. Everyone knows that toppings are the best part of any pizza, and we didn’t hold back! We topped our Buffalo Chicken Pizza with sliced red onion, blue cheese crumbles, mozzarella cheese, prepared Buffalo chicken, and BBQ Bob’s Bobby T’s Pizza Seasoning.
The Smoker Setup

Here are my tips for making the most of your flat-top griddle.
The Process for Making Buffalo Chicken Pizza
Be sure to watch the video to see BBQ Bob and I make this delicious pizza. Here’s a quick rundown of how it all came together.

Prep the buffalo chicken. We removed the chicken thighs from their packaging and trimmed any excess fat. Then, we placed the chicken in a large bowl, seasoned it with Heath Riles BBQ Buffalo Seasoning, and drizzled it with olive oil, mixing well until the meat was coated. We covered the meat and marinated it in the fridge for 2 hours before cooking it.

Start cooking. We fired up the Traeger Flatrock Flat Top Grill and let it come to temperature before laying down some olive oil. Then, we placed the chicken on the pit and cooked it for 6 minutes, flipping the meat halfway through. Your chicken needs to reach an internal temperature of 165℉. Once the meat reached temperature, we removed it from the pit and let it rest for 15 minutes before dicing.

Shape the dough. We removed the dough from its bowl and laid it on a clean work surface sprinkled with flour. Then, we rotated the dough to cover both sides with flour and used our hands to form it into a pie shape. This removed the air bubbles from the dough, leaving it with the perfect texture. Par-bake the pizza crust. We laid the formed crust directly on the Traeger Flatrock Flat Top Grill, set over medium-high heat. We let the crust cook until the dough showed bubbles, then flipped it like a pancake.

Assemble the pizza. We turned the grill off and moved the Buffalo Chicken Pizza to the “cool” side of the pit. Then, we added a drizzle of BBQ Bob’s Mighty Mitch’s Wing Sauce as our base, topped with our prepared Buffalo chicken, mozzarella cheese shreds, sliced red onion, and more Buffalo chicken.

Finish cooking. We shut the lid to the grill and let the pizza cook until the toppings melted and the crust's bottom was brown. This took about 20 minutes. You may need to move the Buffalo Chicken Pizza to the hot side of the grill. We finished the pizza with a little more BBQ Bob’s Mighty Mitch’s Wing Sauce and a sprinkle of BBQ Bob’s Bobby T’s Pizza Seasoning.
The Results
This was one of the best pizzas I’ve ever had! The crust had the ideal balance of crispy and fluffy, doughy inside. We loaded the pie with toppings, giving us a filling, tasty meal!
Storing Leftovers
You can store leftover pizza in the fridge for 4-5 days or freeze it for up to 2 months. If freezing, par-bake the crust and add toppings, then remove from the grill, let cool, cover tightly, and place in the freezer. Bake on the pit until crisp and golden brown.
